De Leon Springs is a 625-acre Florida state park built around a spring that pushes out about 20 million gallons a day at a steady 72 degrees. Swimming is allowed only in the spring pool, which reaches about 30 feet deep at the boil, and you can canoe, kayak and fish in the spring run. At the Old Spanish Sugar Mill, open since 1961, you pour and flip your own pancakes on a griddle at the table. The 4-mile Wild Persimmon Trail and a half-mile paved trail to a 600-year-old bald cypress round out a visit.
